Sweet Potato Flat Bread / Tortillas –
1 cup cooked sweet potato
1 cup corn flour or whole wheat flour
*add any spices you like to this!
In a bowl mash your sweet potato until smooth. You want to mash it without the skins and just after its been steamed or baked so that it is still warm (this makes everything way easier)
Slowly add in your flour until you can make a ball out of it.
Roll the ball out on parchment paper or a nonstick surface and using a bowl cut into round tortillas.
Place tortilla in a pan over medium heat and cook 5-7 minutes on each side until browned.
Serve with your favorite soup or make into a wrap!
